Ingredients

  • 2 Cups Berries
  • 3/4 Cup Coconut Sugar
  • 1 Lime or lemon
  • 2 tsp cornstarch
  • 4 tsp cold water

Instructions

1. In a saucepan, combine the berries, sugar, and lemon juice.
2 Cups Berries
3/4 Cup Coconut Sugar
1 Lime or lemon

2. Bring to a boil over medium heat, stirring constantly.

3. Lower the heat to medium-low and simmer for about 30 minutes, or until the fruit is completely softened, and the mixture falls in heavy drops from the spoon.

4. Dissolve the cornstarch in cold water and stir it into the jam. Cook for another 3 minutes, stirring constantly, until thickened.

4 tsp cold water

5. Pour into a clean jar/container and let cool completely.

Tips:

  • Store in the refrigerator for up to 2 weeks or in the freezer for up to 6 months.
  • Coconut sugar can be substituted with other types of sugar such as granulated sugar, cane sugar, jam sugar, etc.
  • To make a smoother jam, mash and/or strain the berries before cooking.
